The Perfect Lazy Weekend

Last weekend was one of the laziest we've had in a while - and it was lovely. As you know, I'd not been at my healthiest earlier this month, plus we'd been busy hosting family and chasing sheep. So it was quite nice to have a free weekend to just relax!


We kicked off Friday evening with what was essentially a dinner of leftovers... But I wanted to make it as sophisticated as possible. Having found breaded chicken and butternut squash cubes in the freezer, I decided to put them with some kale. I put the leaves in the oven for about 10 minutes on top of the roasting squash to crisp up, and it was yummy! I also dug out some brown rice from the cupboard, and to make it look pretty, used one of my heart shaped cookie cutters for the presentation.


Teamed up with some wine, my boyfriend was very happy! 

We then spent the rest of the evening watching Saving Mr Banks (such a great film, I cried at the end) and eating homemade popcorn.


^ Incredibly fun and easy to make - I drizzled melted butter and sea salt flakes over ours. YUM.

On Saturday I had an embarrassingly long lie-in (hey, let's call it beauty sleep) and Mr Maggie May cooked up some beautiful scrambled eggs for brunch. We then nipped into town to buy some bits and pieces for our holiday, as well as some red velvet cupcakes. (I won't lie, this was my main priority)

Saturday evening was a chilled affair, eating mushroom pizza and watching some of our Downton Abbey boxset. We are so behind! We are only on Season 2! But we love it, so NO SPOILERS please. 

My favourite part of the weekend was Sunday afternoon. After a breakfast of pancakes with bananas and maple syrup, I spent the morning doing work at my desk, constantly refuelling with coffee. But then we decided to go for an afternoon walk.


At that time of day (about 4pm) the light was just beautiful. I do love that about summer. We strolled through the woods, snapping photos as we went and admiring the amazing trees. I had a thoughtful moment as my boyfriend was off photographing something; as I leant against one of the older trees, I wondered how many people before me had done the same? 

I made sure that I had dressed suitably for the occasion - no coat was needed in this weather!

We stopped and watched the clouds for a bit. They looked amazing.


After a couple of hours of walking, we decided to call it a day and made our way home, feeling rested and ready for the week ahead.

    1. It really was :-) Saving Mr Banks is brilliant... It brought back lots of happy childhood memories of watching Mary Poppins. And Colin Farrell was really good! X
